Black Sesame Goji Truffles

Ingredients:

1 cup almonds

½ cup black sesame seeds

¼ cup flax seeds

¼ cup sunflower seeds

1 cup Goji berries

1 cup shredded dried coconut

¼ c agave nectar or honey

½ tsp vanilla extract

Instructions:

  • Grind nuts & seeds into a flour using a food processor, coffee grinder, or Vitamix blender
  • In a large bowl, combine nut flour and goji berries
  • add vanilla extract and slowly add the honey a tbsp at a time until the consistency is moist enough to form into balls. Avoid adding too much or they will be difficult to form.
  • Roll truffles in the shredded coconut
